The Fairway Hotel, Spa & Golf Resort announced details of a new series of Wine Dinners at Balata Restaurant for 2019. The dinners have been individually curated by Food & Beverage Manager Lawrence Podile, in partnership with our executive chef and his team as well as the restaurant’s wine producers, from vineyard to suppliers. “The art of wine pairing is a delicate one, with the best flavour combinations occurring subtly on ones tongue. The trick is to always have a bite of the meal first, then sample the wine and have another sip; see how the flavour changes and you’ll be surprised at how different they can be” says Podile.
The series of dinners will give guests the opportunity to learn about the history of the different wine estates and provide a rare insight into the production processes of some of South Africa’s finest wines. The team of passionate chefs are dedicated to producing world-class-cuisine, using only the best seasonal produce that can be sourced locally. This team have created bespoke four-course menus for the individual dinners. Each dish has been carefully paired with the tasting notes of the wines served on the evening. The chefs have woven the ingredients into the delicious dishes that can stand proud on their own and bring out exceptional nuances in the wines they have been paired with.
